Old Bay–Thyme Turkey Meatballs with Lime Tomato & Avocado

Yield: Turkey mixture makes 4 portions; tomato and avocado accompaniments serve 2.
Ingredients
Turkey meatballs
- 1 lb (454 g) 93% lean ground turkey
- Leaves from 5 thyme sprigs
- ½ shallot, very finely chopped
- 2 small garlic cloves or 1 large, crushed and finely chopped
- 1 tsp salt
- 1 tsp white pepper
- 1 tsp Old Bay seasoning
- Avocado oil, for frying
Lime tomato
- 3 Roma tomatoes, diced
- Juice of ½ lime
- 1 tsp salt
Avocado
- 1 small avocado
- Juice of ½ lime
- Lime zest, to finish
Method
- Mix the turkey with the thyme, shallot, garlic, salt, white pepper and Old Bay. Shape into small meatballs, slightly larger than the tip of a thumb.
- For two portions, cook half the meatballs and reserve the remaining mixture. Heat a pan over medium heat, add avocado oil and sear the meatballs until golden. Turn, reduce the heat to low and cook for another 10–15 minutes.
- Combine the diced tomatoes with half the lime juice and salt.
- Mash the avocado with the remaining lime juice, leaving it slightly chunky. Shape it into a low round on each plate, wipe the plate clean and finish with lime zest.
- Serve the meatballs with the lime tomato and avocado alongside.
